White pyramids, pink water, olive-dark marsh — the salt pans of Castro Marim are the closest thing the Algarve has to abstract painting. These are working salinas, harvested the traditional way, and the landscape they make is entirely functional: rectangles of shallow brine divided by earth dykes, mounds of drying salt catching the sun, the castle and the village floating on the horizon behind.
The colour is the surprise. As the brine concentrates through summer, the shallowest pans shift toward rose and rust-pink, and against the blinding white of the harvest mounds the effect is graphic in a way nothing else in the region matches. Flamingos and waders work the margins, and every dyke line runs somewhere useful for a composition.
When to go: late summer, when the harvest mounds are at their biggest and the pink at its deepest — this is a landscape made by heat and evaporation, and it peaks with them. Low sun, early or late, gives the mounds shadow and the water its strongest colour.
Remember whose ground this is. The salinas are private working land — keep to the public tracks and roads that skirt the pans, stay off the dyke walls of active pans, and give the salineiros room to work. The photographs are all reachable without trespassing.
